Available only once a year, Khao Chae returns from 1 March – 31 May as part of Thailand’s cherished summer tradition.

Once served exclusively in the royal courts, Khao Chae has become a treasured seasonal tradition. Fragrant jasmine rice is gently immersed in chilled floral-infused water, releasing a delicate aroma as rose petals float gracefully on the surface.

Each accompaniment reflects meticulous craftsmanship. Sweet preserved radish is slowly caramelized to achieve depth and gloss. Shrimp paste balls are hand-shaped and fried to golden perfection. Stuffed shallots and sweet shredded pork provide richness, while fresh vegetables cleanse and balance the palate.

Khao Chae is meant to be savored slowly. A spoonful of cool, aromatic rice followed by a bite of its savory condiments creates a harmonious rhythm of flavors — sweet, salty, fragrant, and refreshing.
